North Cascades Ginger Cookies

List of Ingredients
- 1 stick butter, softened
- 3/4 cup sugar
- 1 large egg
- Grated skin (zest) from 1 large lemon
- 1 tsp lemon juice
- 1-1/3 cups flour
- 1/2 tsp ground ginger
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/4 cup candied ginger, finely diced
Instructions
- In mixing bowl, cream the butter and sugar until light and fluffy. Add the egg and beat. Add the zest and lemon juice and beat again.
- Get out another bowl and in it combine the flour, ginger, baking soda, salt and candied ginger. Whisk until all ingredients are thoroughly mixed. With the mixer running at slow speed, add the dry ingredients to the butter-sugar mixture just until combined. Don't overbeat.
- Line two baking sheets with parchment paper. Scoop the batter into a rounded teaspoon and distribute over the paper. Sprinkle each lump of batter with a bit of sugar. Bake the cookies in a 350-degree oven for 10 minutes or until the bottoms are browned. The center of each cookie will be soft when removed from the oven.
Makes about 36 small cookies.
