Pacific Northwest Salmon-Caper Spread

List of Ingredients
- 8 ounces medium or sharp Cheddar cheese, shredded (about 3 cups)
- 4 ounces softened lowfat cream cheese
- 2 Tbsp olive oil
- 1/2 tsp paprika
- 2 heaping tsp capers, drained
- 1/2 lb. smoked salmon fillet, skin and bones removed, crumbled
- 1/4 cup beer
Instructions
- In a food processor, combine the Cheddar and cream cheeses, olive oil, paprika, capers, salmon and beer. Process until thoroughly mixed.
- Pack into a crock or bowl, cover and refrigerate overnight to blend the flavors. Bring out of refrigerator 1 hour before serving.
Makes about 3 cups.
