    Pacific Northwest Salmon-Caper Spread

    From "Dungeness Crabs and Blackberry Cobblers"


    List of Ingredients


    • 8 ounces medium or sharp Cheddar cheese, shredded (about 3 cups)
    • 4 ounces softened lowfat cream cheese
    • 2 Tbsp olive oil
    • 1/2 tsp paprika
    • 2 heaping tsp capers, drained
    • 1/2 lb. smoked salmon fillet, skin and bones removed, crumbled
    • 1/4 cup beer


    Instructions


    1. In a food processor, combine the Cheddar and cream cheeses, olive oil, paprika, capers, salmon and beer. Process until thoroughly mixed.

    2. Pack into a crock or bowl, cover and refrigerate overnight to blend the flavors. Bring out of refrigerator 1 hour before serving.

      Makes about 3 cups.
