    Smoked Salmon Fettucine Primavera

    List of Ingredients


    • 1 lb. fettucine
    • 3 Tbsp olive oil
    • 1 clove garlic, diced
    • 1/2 lb. fresh snow peas
    • 1 roasted red sweet pepper, cut into strips
    • 1 cup heavy cream
    • 8 to 10 ounces smoked salmon
    • 1/2 cup grated Parmesan cheese
    • 2 Tbsp chopped fresh parsley


    Instructions


    1. Cook and drain the pasta.

    2. Heat the olive oil in a medium saucepan. Add garlic, snow peas and sweet red pepper; cook for 1 minute.

    3. Add the cream and bring to a boil. Add pasta to cream and gently combine with salmon, cheese and parsley. Serve immediately.
