    List of Ingredients


    • 1/4 cup dried orange peel
    • 1/4 cup firmly packed brown sugar
    • 1/4 cup black peppercorns
    • 3 Tbsp coriander seeds
    • 2 Tbsp cracked star anise
    • 1 Tbsp cumin seeds
    • 1 Tbsp fennel seeds
    • 1 Tbsp sea salt


    Instructions


    1. Combine dried orange peel, brown sugar, peppercorns, coriander seeds, star anise, cumin seeds, fennel seeds and sea salt. Grind together in a spice grinder or dedicated coffee grinder to a semi-coarse texture. Store in an airtight jar in your spice cupboard; use within 3 months.

      Makes 1-1/4 cups.

    This can be used with other kinds of fish, as well as chicken.
