Grilled Pancetta Oysters

List of Ingredients
- 12 Pacific oysters
- 1/2 head spinach
- Kosher salt, to taste
- Black pepper, to taste
- 3 to 4 ounces Pancetta bacon
- 2 ounces chopped parsley
- 1 ounce chopped garlic
- 1 tsp lemon zest
Instructions
- Shuck oysters. Rinse in the oyster's liquor and lay each oyster on top of a spinach leaf. Season with salt and pepper. Wrap in Pancetta bacon.
- Grill 3 to 4 minutes, until bacon is crisp.
- Mix parsley, garlic, lemon zest and a pinch of salt and pepper. Serve on top of the grilled oysters.
Serves 2
VARIATION: You could use shrimp, instead of oysters.
