    Grilled Pancetta Oysters

    List of Ingredients


    • 12 Pacific oysters
    • 1/2 head spinach
    • Kosher salt, to taste
    • Black pepper, to taste
    • 3 to 4 ounces Pancetta bacon
    • 2 ounces chopped parsley
    • 1 ounce chopped garlic
    • 1 tsp lemon zest


    Instructions


    1. Shuck oysters. Rinse in the oyster's liquor and lay each oyster on top of a spinach leaf. Season with salt and pepper. Wrap in Pancetta bacon.

    2. Grill 3 to 4 minutes, until bacon is crisp.

    3. Mix parsley, garlic, lemon zest and a pinch of salt and pepper. Serve on top of the grilled oysters.

      Serves 2

      VARIATION: You could use shrimp, instead of oysters.
