    Northwest Mushroom Saute

    List of Ingredients


    • 1 lb. mixed wild and cultivated mushrooms
    • 1 Tbsp walnut or olive oil
    • 1 tsp minced garlic
    • 1 tsp fresh rosemary leaves
    • 1/2 cup madeira or dry red wine


    Instructions


    1. Trim the mushroom stems and wipe caps with a damp paper towel. Pour oil in a heavy skillet and place over medium-high heat until very hot. Add whole mushrooms. Saute for about 3 minutes.

    2. Add garlic and rosemary. Continue to saute for about 30 seconds.

    3. Add wine and bring to a boil; cook 1 minute. Then reduce the heat to medium-low; cover and steam a few minutes longer until mushrooms are tender.

      Makes 4 servings.
