Northwest Mushroom Saute

List of Ingredients
- 1 lb. mixed wild and cultivated mushrooms
- 1 Tbsp walnut or olive oil
- 1 tsp minced garlic
- 1 tsp fresh rosemary leaves
- 1/2 cup madeira or dry red wine
Instructions
- Trim the mushroom stems and wipe caps with a damp paper towel. Pour oil in a heavy skillet and place over medium-high heat until very hot. Add whole mushrooms. Saute for about 3 minutes.
- Add garlic and rosemary. Continue to saute for about 30 seconds.
- Add wine and bring to a boil; cook 1 minute. Then reduce the heat to medium-low; cover and steam a few minutes longer until mushrooms are tender.
Makes 4 servings.
