    Taylor Shellfish Farms Oyster Stew

    Source of Recipe

    Taylor Shellfish Farms (Shelton, Washington)

    List of Ingredients

    • 2 pints shucked oysters
    • 1/2 cup butter
    • 2 cloves garlic, peeled and minced
    • 1 medium onion, peeled and diced
    • 4 cups whole milk
    • 2 tsp salt
    • 1 tsp pepper
    • 1/2 cup bacon bits (optional)
    • Chopped parsley and green onions, for garnish

    Instructions

    1. Blanch oysters for 2 to 3 minutes. (See note.) Drain the oysters. Cut into bite-size pieces.

    2. Melt butter in a pot and brown the garlic. Saute garlic and onion until they are soft and translucent.

    3. Add oysters, milk, salt, pepper and bacon bits (if desired). Stir until warm. (Do not boil.) Garnish with chopped parsley and green onions. Serve with oyster crackers.

      Makes 4 to 6 main-course servings;
      or up to 8 appetizer servings.

      NOTE: The oysters should be blanched until they are firm, similar to a poached egg. For a white, clear broth, drain the oysters well of their liquor, as well as the water used for blanching them. Do not use either as stock in the stew.
