Westport Salmon and Chips

List of Ingredients
- 1 cup flour
- 3/4 cup beer
- 1 Tbsp salad oil
- 3 egg whites, beaten stiff
- Salmon fillet, skinned and cut into 1- x 2-inch strips
Instructions
- Combine flour, beer and oil. Fold in egg whites.
- Coat strips of salmon in batter. Deep-fry until golden brown. Serve with tartar sauce, lemon, coleslaw, and your favorite french fries. (For an English flavor, try malt vinegar on your salmon and chips.)
