    Westport Salmon and Chips

    From "Pacific Northwest Salmon Cookbook"


    List of Ingredients


    • 1 cup flour
    • 3/4 cup beer
    • 1 Tbsp salad oil
    • 3 egg whites, beaten stiff
    • Salmon fillet, skinned and cut into 1- x 2-inch strips


    Instructions


    1. Combine flour, beer and oil. Fold in egg whites.

    2. Coat strips of salmon in batter. Deep-fry until golden brown. Serve with tartar sauce, lemon, coleslaw, and your favorite french fries. (For an English flavor, try malt vinegar on your salmon and chips.)

      Serves 4
