Greek-Style Tortellini

List of Ingredients
- 1 package (9 ounces) refrigerated fresh cheese tortellini
- 2 Tbsp olive oil
- 1½ tsp red wine vinegar
- 1 can (14 ounces) medium-size artichoke hearts, drained and quartered
- 1 cup halved grape tomatoes or 1 large tomato, cored and chopped
- ¼ cup finely chopped green onions, green parts only
- 1/8 tsp dried oregano
- 1/8 tsp black pepper, or to taste
Instructions
- Bring large pot of salted water to a full boil. Add tortellini. Cook according to package directions. Drain well. Spoon tortellini into a large serving bowl. Let cool 10 minutes until warm.
- In cup or small bowl, whisk together oil and vinegar. Add to tortellini. Mix gently. Add artichoke hearts, tomatoes, green onions, oregano and black pepper to tortellini. Toss gently.
Makes 4 main-dish servings
(or 6 side-dish servings)
Final Comments
If desired, add 1 cup diced grilled chicken breast to the salad. Increase vinegar to 1 tablespoon and oil to 2½ tablespoons.
