    Greek-Style Tortellini

    List of Ingredients


    • 1 package (9 ounces) refrigerated fresh cheese tortellini
    • 2 Tbsp olive oil
    • 1½ tsp red wine vinegar
    • 1 can (14 ounces) medium-size artichoke hearts, drained and quartered
    • 1 cup halved grape tomatoes or 1 large tomato, cored and chopped
    • ¼ cup finely chopped green onions, green parts only
    • 1/8 tsp dried oregano
    • 1/8 tsp black pepper, or to taste


    Instructions


    1. Bring large pot of salted water to a full boil. Add tortellini. Cook according to package directions. Drain well. Spoon tortellini into a large serving bowl. Let cool 10 minutes until warm.

    2. In cup or small bowl, whisk together oil and vinegar. Add to tortellini. Mix gently. Add artichoke hearts, tomatoes, green onions, oregano and black pepper to tortellini. Toss gently.

      Makes 4 main-dish servings
      (or 6 side-dish servings)



    Final Comments


    If desired, add 1 cup diced grilled chicken breast to the salad. Increase vinegar to 1 tablespoon and oil to 2½ tablespoons.
