    Jambalaya Pasta

    List of Ingredients


    • 1/2 cup chopped onion
    • 1/2 cup chopped green pepper
    • 1/2 cup chopped sweet red pepper
    • 1/3 cup chopped celery
    • 1 Tbsp butter
    • 1 (14-1/2 oz.) can Italian diced tomatoes, undrained
    • 1 (14-1/2 oz.) can chicken broth
    • 2/3 cup sliced fresh mushrooms
    • 1 tsp dried basil (or thyme)
    • 3 to 4 bay leaves
    • 1/4 tsp garlic powder
    • 1/4 tsp pepper
    • 1/8 tsp cayenne pepper
    • Salt to taste
    • 8 ounces spiral pasta
    • 2 cups cubed cooked chicken


    Instructions


    1. In a skillet, saute the onion, peppers, and celery in butter until tender. Stir in tomatoes, broth, mushrooms, and seasonings. Bring to a boil; reduce heat. Cover and simmer for 15 to 20 minutes.

    2. Meanwhile, cook pasta according to package directions.

    3. Add chicken to tomato mixture; heat through. Drain pasta and add to chicken mixture. Discard bay leaves and serve.

      Makes 8 servings.
