    Pasta B.L.T.

    List of Ingredients


    • 1/2 lb. sliced bacon
    • 1/3 cup red wine vinegar
    • 1/3 cup mayonnaise
    • 3 Tbsp olive oil
    • 1 Tbsp minced onion
    • 3/4 tsp salt
    • 1/4 tsp freshly ground pepper
    • 12 ounces pappardelle pasta
    • 1 pint cherry tomatoes, quartered
    • 1/4 head iceberg lettuce, shredded


    Instructions


    1. Cook bacon in a large skillet until crispy. Drain on paper towels and crumble.

    2. Whisk 1 tablespoon bacon fat in a bowl with vinegar, mayonnaise, olive oil, onion, salt and pepper until well blended.

    3. Cook pasta according to package directions. Drain. Toss with vinaigrette, bacon, tomatoes and lettuce.

      Makes 4 to 6 servings.
