    Stuffed Manicotti

    -- Tomato Sauce --

    1/4 cup olive oil
    1/4 cup chopped onion
    2 cloves garlic, crushed
    1 (1-lb.) can tomato puree
    1 (2-lb.) can Italian plum tomatoes
    1/4 cup chopped parsley
    1 Tbsp sugar
    1/2 tsp salt
    1 tsp dried oregano
    1/2 tsp dried basil
    1/4 tsp pepper
    1/4 tsp fennel seed

    --Manicotti --

    12 manicotti pasta shells (uncooked)
    1/8 cup olive oil
    1/2 cup chopped onion
    2 cloves garlic, minced
    1 lb. ground beef
    1 egg, slightly beaten
    1/2 Tbsp salt
    1/2 tsp dried oregano
    1/4 tsp dried basil
    1/8 tsp black pepper
    8 ounces Mozzarella cheese
    1/2 cup grated Parmesan cheese

    Recipe


    To make the sauce: Carefully pour the oil into a pan and turn the heat to medium. Add the onions and garlic and cook for 3 minutes, stirring with a wooden spoon once or twice, until tender. Add remaining sauce ingredients, plus 1 cup of water. Bring to a boil; then lower heat and simmer, covered, for one hour.

    To make the stuffed manicotti: Heat the oil in a frying pan, then add the onion and garlic. When the onions begin to soften, add the ground beef and brown; pour off the grease. Add egg, salt, herbs, pepper, and 3/4 of the sauce.

    Grate three-quarters of the mozzarella and add it to the meat mixture. Spoon the meat mixture into the uncooked manicotti shells.

    Preheat oven to 375 degrees. Spoon 2 cups of the sauce onto the bottom of a flat oven dish. Top with the stuffed manicotti, cover with remaining sauce, the Parmesan, and the last of the mozzarella (sliced, not grated).

    Cover dish with aluminum foil and bake for 60 minutes. Uncover and return to the oven for another 10 minutes.


    Serves 4 to 6
