    List of Ingredients


    • 1 lb. penne pasta, cooked "al dente" (drained and rinsed)
    • 2 lbs. fresh Roma tomatoes, coarsely chopped
    • 1/4 cup fresh basil leaves
    • 1/4 cup fresh parsley
    • 1/4 cup fresh oregano leaves
    • 1/4 cup fresh mint leaves
    • 1/2 cup olive oil
    • 2 cloves garlic
    • 1 tsp salt
    • 1/2 tsp black pepper
    • 1 cup shredded Parmesan cheese


    Instructions


    1. Place cooked pasta in a large mixing bowl.

    2. Place tomatoes in food processor; pulse on and off until chopped into 1/2-inch pieces, not pureed. Transfer to bowl with pasta.

    3. Place herbs, oil, garlic, salt and pepper in food processor; pulse on and off until finely chopped. Transfer to bowl with pasta. Toss well. Adjust seasonings. Add cheese and refrigerate until ready to serve.

      Serves 6 to 8
