    List of Ingredients


    • 1 lb. small, seashell-style pasta (lumache)
    • 1/4 cup butter
    • 1 lb. cooked turkey, diced
    • 1/4 cup dry white wine
    • 8 ounces frozen peas, thawed
    • 1/4 tsp thyme
    • 2 cups cream or whole milk
    • Salt, pepper to taste
    • 1-1/4 cups freshly grated Parmesan cheese


    Instructions


    1. Cook the pasta according to package directions in boiling, salted water.

    2. Saute the turkey meat in melted butter 2 minutes. Add the wine and simmer 2 more minutes. Add the peas and thyme, simmering another minute. Pour in the cream and bring to a bare boil.

    3. Immediately reduce heat and add the pasta to the turkey and sauce, then toss. Add salt and pepper to taste. Add a cup of the Parmesan cheese, slowly, while stirring.

      When the pasta is warm, serve up on plates and pass additional Parmesan.

      Serves 4
