    Tuna-Mushroom Penne

    List of Ingredients


    • 3 Tbsp butter or margarine
    • 2 tsp chopped garlic
    • 2/3 cup chopped onions
    • 2/3 cup diced red pepper
    • 1-1/2 cups sliced mushrooms
    • 1 cup diced tomato
    • 1-1/2 cups fresh or jar tomato sauce
    • Salt and pepper to taste
    • 1 can chunk light tuna
    • 1 lb. penne pasta
    • 1/2 cup fresh basil and oregano, chopped
    • 3/4 cup grated Parmesan cheese


    Instructions


    1. Melt butter over medium heat in a heavy saucepan. Saute garlic, onions and peppers for 3 minutes, until softened. Add the fresh sliced mushrooms and stir.

    2. Increase heat to high and cook, stirring, for 3 to 4 minutes. Add diced tomatoes and sauce. Cover and bring to a boil. Reduce heat and simmer gently for 20 minutes. Adjust seasonings, if necessary.

    3. Fold in tuna, herbs, and 1/4 of the cheese.

    4. While sauce simmers, cook pasta according to package directions. Drain.

      Toss the sauce with the drained pasta and sprinkle with the remaining cheese.

      Serves 4
