    Barbara's Shrimp Salad

    Recipe Introduction

    "Even if she wasn't my mother-in-law, I'd be happy eating Barbara Berrigan's creamy and elegant shrimp salad every day! Take the time to finely chop all the ingredients; it makes all the difference in the texture of the salad."

    List of Ingredients

    â—¦ 1 pound boiled wild American shrimp, deveined and finely chopped
    â—¦ ½ stalk celery, minced
    â—¦ 2 green onions, finely chopped
    â—¦ 2 hard-boiled eggs, minced
    â—¦ ¾ cup mayonnaise
    â—¦ 1 tablespoon Creole mustard
    â—¦ 1 tablespoon prepared horseradish
    â—¦ 4 dashes Tabasco
    â—¦ 1 teaspoon Zatarain's Shrimp & Crab Boil

    Recipe

    Mix all the ingredients together in a large bowl, and season with more Tabasco or more spices as needed.

    I like to serve the salad with toasts, or in a sandwich, or the way Miss Barbara does — stuffed into a fresh tomato half for lunch.

    Serves 6
