Butterscotch Brownies

- 1 cup (2 sticks) unsalted butter
- 2 cups (well-packed) light brown sugar
- 2 large eggs, beaten
- 1½ cups all-purpose flour
- 2 tsp baking powder
- 1 tsp salt
- 1 tsp vanilla extract
- ¾ cup coarsely chopped walnuts (optional)
Instructions
- Heat the oven to 350° and butter an 8- x 10-inch baking pan.
Melt the butter in a medium saucepan over low heat. Remove from heat and add the sugar. Combine well. Let the mixture cool to room temperature, then transfer to a large mixing bowl. Add the eggs, mixing while adding.
- Sift the flour, baking powder and salt into a bowl. Slowly add the dry ingredients to the wet, stirring while adding. When the wet and dry mixtures are well combined, stir in the vanilla and the walnuts, if using.
- Scrape the batter into the pan. Bake the brownies for 35 to 45 minutes, or until a knife comes out clean. Remove from the oven and let the brownies cool for about 20 minutes before cutting.
Makes 20 brownies.
