    Ham Pasta Salad

    List of Ingredients


    • 1 pound your favorite medium cut pasta (bowties, medium shells, elbow macaroni, rotini), cooked
    • Drizzle of olive oil
    • 2 cups chopped ham
    • ½ cup chopped celery
    • ½ cup chopped Vidalia or other sweet onion
    • 1 green onion, sliced
    • 1 cup shredded or cubed Cheddar cheese
    • 1 cup grape or cherry tomatoes, sliced
    • 2 Tbsp pickle juice (optional)
    • 1 cup mayonnaise
    • ¼ cup milk
    • 1 packet dry Ranch dressing mix
    • Salt and pepper to taste


    Instructions


    1. Cook pasta according to package directions; rinse and drain. Drizzle lightly with olive oil. To pasta, add ham, celery, Vidalia onion, green onion, cheese, and tomatoes; toss and set aside.

    2. In a separate bowl, whisk together pickle juice, mayonnaise, milk, Ranch dressing mix, salt, and pepper. Pour over pasta mixture, and toss to coat thoroughly; taste and adjust seasonings. Refrigerate several hours or overnight.

    3. Toss before serving, adding additional milk up to ¼ cup, if needed to moisten.

      Makes about 8 servings

    Chopped boiled eggs, sweet or sour chopped pickles or pickle relish, chopped red, green or yellow sweet bell peppers, jalapeño peppers, black or green olives, frozen peas, peeled and chopped cucumber
