Recipe Introduction
"I rarely serve chili in a bowl anymore - I make Mason Jar Frito Pies instead. Layering it in a Mason jar with Fritos and all the fixin's is just so darn cute! And it's so easy to eat and clean up, whether you're tailgating or watching the game at home."
List of Ingredients
• 2 pounds lean ground beef
• 1 (46-ounce) can tomato juice
• 1 cup water
• 2 (6-ounce) cans tomato paste
• 1 (15-ounce) can kidney beans, drained
• 1 (15-ounce) can pinto beans, drained
• ½ Tbsp chili powder
• 1½ tsp cumin
• ½ tsp oregano
• ½ tsp white sugar
• ¼ tsp cayenne pepper
• 1 tsp black pepper
• ¼ cup chopped bell pepper
• 1½ cups chopped onions
Recipe
Brown ground beef in a large pot over medium heat until cooked through; drain.
Add tomato juice, water, tomato paste, kidney beans, pinto beans, chili powder, cumin, oregano, sugar, cayenne pepper, black pepper, bell pepper, and chopped onions. Bring to a boil over medium-high heat.
Once chili starts to boil, lower heat, and simmer 2 hours, uncovered.
Serves 6
Mason Jar Frito Pies:
• 1 bag Fritos corn chips
• 1 cup shredded Cheddar cheese
• ½ cup sour cream
• Jalapeño slices for garnish
Layer a handful of Fritos in each of six 12-ounce Mason jars, and top with chili.
Sprinkle with a couple tablespoons cheese, and add a big spoonful of sour cream. Garnish with a couple slices jalapeño.
