    Pea Pasta Salad

    From "Our Sweet Basil Kitchen" by Cade and Carrion Cheney

    List of Ingredients


    • 8 ounces dry pasta, such as gemelli
    • 1 cup mayonnaise
    • 1 tsp apple cider vinegar
    • 1 tsp Dijon mustard
    • 1 Tbsp granulated sugar
    • ¼ tsp salt
    • 1/8 tsp ground black pepper
    • 1 cup frozen peas, defrosted
    • 1 cup chopped tomatoes
    • 1 cup chopped cucumbers
    • 1 green bell pepper, chopped
    • 3 hard-boiled eggs, chopped
    • 1 cup Cheddar cheese cubes
    • 4 slices bacon, cooked crisp and crumbled


    Instructions


    1. Cook the pasta according to package directions, being sure to not overcook it. Drain well and set aside.

    2. In a large bowl, whisk together the mayonnaise, vinegar, mustard, sugar, salt and pepper. Stir in the pasta, peas, tomatoes, cucumbers, bell pepper, eggs, and cheese.

    3. Top with bacon crumbles and serve. (If you choose to make this salad ahead of time, stir in the cheese and bacon just before serving.)


      Serves 8 to 10
