Recipe Introduction
"My sweet daughter loved the pasta salad that was served at a nearby restaurant. She loved it so much it was an obsession. Sometimes we have to tell a little white lie in order to get what we need. In my defense, it was for my daughter, and I will do anything for my children. I had to have the recipe, so I called 'said restaurant' and told them that I was highly allergic. I also said that I had heard they had the best pasta salad and I was dying to try it, but I had to know all the ingredients. If they couldn't give me all the ingredients, and I mean all of them, to please let me know and I would understand. The sweet boy on the other end of the phone rattled off all the ingredients without any hesitation. We call this Sorority Girl Pasta Salad because our Ole Miss sorority girls love it so, so much. On second thought, we really should call it Guilty Pasta Salad. It's so good and how I got the recipe was so, so bad."
List of Ingredients
◦ 1 (1-pound) package uncooked rotini pasta
◦ 2 cups chopped cucumber (from 1 large cucumber)
◦ 2 cups chopped tomato (from 1 large tomato)
◦ 1 cup mayonnaise (such as Hellmann's)
◦ 1 tablespoon Greek seasoning (such as Cavender's All Purpose Greek Seasoning)
Recipe
Cook the pasta according to the package directions. Drain and rinse with cold water; drain well.
Stir together the cooked pasta, cucumber, tomato, mayonnaise, and seasoning in a large bowl. Cover and chill at least one hour before serving.
