Chocolate-Macadamia Nut Pie

- 1 cup (6 ounces) semisweet chocolate morsels
- 1-2/3 cups crushed chocolate wafers (6 ounces)
- ¼ cup butter, melted
- ½ (8-ounce) package cream cheese, softened
- ¾ cup sugar
- 1½ tsp vanilla extract
- 1 (3½-ounce) jar macadamia nuts, coarsely chopped
- 2 cups whipping cream
- Garnish: sweetened whipped cream, chocolate shavings, and toasted macadamia nuts
Instructions
- Place chocolate morsels in top of a double boiler; bring water to a boil. Reduce heat to low; cook until chocolate melts, stirring often. Remove from heat, and set aside. Combine crushed wafers and butter. Firmly press mixture in bottom of a lightly buttered 9-inch springform pan.
- Combine melted chocolate, cream cheese, sugar, and vanilla in a mixing bowl; beat at medium speed with an electric mixer until smooth. Fold in macadamia nuts.
- Beat 2 cups whipping cream at high speed until soft peaks form. Add about one-fourth of whipped cream to chocolate mixture, and beat until blended. Fold remaining whipped cream into chocolate mixture. Carefully remove sides of springform pan; let pie stand 10 minutes before serving. Garnish, if desired.
Makes 1 (9-inch) pie.
