Stagecoach Cinnamon Pie Pastry

List of Ingredients
- 3 cups all-purpose flour
- 1 tsp salt
- 1/2 tsp cinnamon
- 1/4 tsp baking powder
- 3 Tbsp sugar
- 1 cup very cold, unsalted butter, cut into 1/4-inch pieces
- 2 large egg yolks
- 1/2 cup ice water
Instructions
- Sift together flour, salt, cinnamon, baking powder, and sugar into a mixing bowl. Cut in butter with pastry blender until mixture resembles coarse meal. Add egg yolks, one at a time, along with the ice water. Do not overwork the dough. Use on/off switch on an electric mixer to incorporate ingredients. Wrap in plastic wrap and refrigerate for at least 30 minutes.
- After dough is chilled, it can be rolled out to about 1/8-inch thickness on a lightly floured surface. Shape and cut to desired size. Be sure to grease the pie pan.
- To prebake the pie shell, preheat oven to 400 degrees. Line pastry with parchment paper and fill with dried beans. Bake until the edges begin to turn golden, for about 12 to 15 minutes. Remove the beans and continue baking until the bottom is golden, for another 10 minutes.
Note: Brushing the crust edges with 1 egg beaten with 2 tablespoons water adds a nicer browning color.
Makes enough pastry for 1 double-crust pie.
