    Key Lime Pie

    From "The Coastal Living Cookbook"

    List of Ingredients


    • 1¼ cups graham cracker crumbs
    • ¼ cup firmly packed light brown sugar
    • 1/3 cup butter, melted
    • 2 (14-ounce) cans sweetened condensed milk
    • 1 cup fresh Key lime juice
    • 2 egg whites
    • ¼ tsp cream of tartar
    • 2 Tbsp sugar
    • Garnish: lime slices


    Instructions


    1. Combine first 3 ingredients. Press into a 9-inch pie plate. Bake at 350° for 10 minutes; cool. Stir together milk and lime juice until blended. Pour into crust.

    2. Beat egg whites and cream of tartar at high speed with an electric mixer just until foamy. Add sugar, 1 tablespoon at a time, beating until soft peaks form and sugar dissolves (2 to 4 minutes). Spread meringue over filling.

    3. Bake at 325° for 25 minutes. Cool pie completely. Chill 8 hours. Garnish, if desired.

      Makes one (9-inch) pie.
