Pastry: Chocolate Crust

- 1-1/4 cups all-purpose flour
- 2 Tbsp unsweetened cocoa powder
- 1/2 tsp salt
- 6 Tbsp unsalted butter, chilled and cut into pieces
- 3 large egg yolks, lightly beaten
- 1/3 cup sugar
- 1/2 tsp pure vanilla extract
- 1 to 2 Tbsp ice water
Instructions
- Sift the flour, cocoa and salt into a large bowl. Set aside. In a smaller bowl, combine the butter, egg yolks, sugar and vanilla using the back of a fork. Add to the dry ingredients. Rub the mixture with your fingers until it holds together without large pieces of butter remaining. Add a little ice water, if needed.
- Turn the dough out onto a clean piece of plastic wrap. Knead briefly, about 1 minute, until smooth. Form the dough into a disk, wrap and chill about 30 minutes to evenly distribute the moisture.
- Lightly spray a 9-inch pie pan with cooking spray. Using the sheet of plastic in which it was wrapped, press the dough over the bottom and up the sides of the pan. Chill at least 15 minutes; discard the plastic wrap and fill the crust.
For one single-crust 9-inch pie.
