    Peach-Blueberry Pie

    From "Spoonbread and Strawberry Wine"


    List of Ingredients


    • 3 cups sliced fresh peaches
    • 1 cup blueberries
    • 3/4 cup to 1 cup sugar (depending on sweetness of peaches)
    • 3 rounded tablespoons flour
    • 1/4 tsp salt
    • 1/2 tsp ground cinnamon
    • 1/8 tsp ground nutmeg
    • One 9-inch pastry shell, unbaked
    • 3/4 cup heavy cream
    • 2 Tbsp butter


    Instructions


    1. Preheat oven to 450° F.

    2. Mix peaches and blueberries in bowl. Combine sugar, flour and spices, and stir into fruit. Spoon into unbaked pie shell. Pour heavy cream over fruit. Dot with butter.

    3. Bake for about 15 minutes, or until center of pie bubbles, then reduce heat to 350° F, and continue baking until nicely browned and set in the middle, about 45 minutes. Serve warm or cold.

      Makes 6 to 8 servings.
