    Plain Ole Dixie Chocolate Pie

    List of Ingredients


    • 1/2 cup unsweetened cocoa powder
    • 1/4 cup cornstarch
    • 4 large egg yolks
    • 1/8 tsp salt
    • 1-1/2 cups granulated sugar
    • 2 cups milk
    • 2 tsp pure vanilla extract
    • 1 pre-baked 9-inch Chocolate Wafer Pie Shell (recipe follows)
    • 1 cup heavy cream, whipped to stiff peaks


    Instructions


    1. In a large, heavy saucepan, combine the cocoa, cornstarch, egg yolks, salt and sugar, and beat well with a wire whisk until blended. Over low heat, gradually add the milk, whisk until smooth, and cook slowly until thickened, stirring constantly.

    2. Remove the pan from the heat, add the vanilla, stir, and let cool.

    3. Pour the mixture into the pie shell, chill until slightly firm but not hard, and serve topped with whipped cream.

      CHOCOLATE WAFER PIE SHELL

      1-2/3 cups crushed chocolate wafer crumbs
      1/2 cup (1 stick) butter, softened
      1/4 cup granulated sugar

      Preheat the oven to 350 degrees (F). Grease a 9-inch pie plate and set aside. In a medium mixing bowl, combine the wafer crumbs, butter and sugar until the mixture is well blended and the crumbs are evenly moistened. Press the mixture into the bottom and sides of the prepared pie plate and bake until firm, about 10 minutes. Allow the shell to cool completely.
