Shasta Mountain Caramel Pie

- 5 eggs, separated
- 1 cup flour
- 5 Tbsp cornstarch
- 3 cups milk
- 3 Tbsp butter
- 2 cups sugar
- 1 Tbsp vanilla
- 3 (8-inch) pie shells, baked
Instructions
- Save egg whites for meringue. Beat egg yolks, and add 1 cup sugar and flour. Add milk, cornstarch, and vanilla, and set aside.
- In an iron skillet over medium heat, melt butter and caramelize 1 cup sugar. Keep stirring until it becomes liquid. Add milk mixture. The sugar will crackle and pop and look like plastic! That's fine. Stir constantly until it all melts into a thick, creamy caramel.
- Pour into baked pie shells, top with a stiff meringue, and brown.
Makes 3 pies.
