    Shasta Mountain Caramel Pie

    List of Ingredients


    • 5 eggs, separated
    • 1 cup flour
    • 5 Tbsp cornstarch
    • 3 cups milk
    • 3 Tbsp butter
    • 2 cups sugar
    • 1 Tbsp vanilla
    • 3 (8-inch) pie shells, baked


    Instructions


    1. Save egg whites for meringue. Beat egg yolks, and add 1 cup sugar and flour. Add milk, cornstarch, and vanilla, and set aside.

    2. In an iron skillet over medium heat, melt butter and caramelize 1 cup sugar. Keep stirring until it becomes liquid. Add milk mixture. The sugar will crackle and pop and look like plastic! That's fine. Stir constantly until it all melts into a thick, creamy caramel.

    3. Pour into baked pie shells, top with a stiff meringue, and brown.

      Makes 3 pies.
