    List of Ingredients


    • 1 (16-oz.) prebaked pizza crust
    • 1 tsp olive oil
    • 1/3 cup chopped red onion
    • 2 cloves garlic, minced
    • 1/2 of a 15-oz. can black beans, drained
    • 1/2 of a 15-oz. can garbanzo beans, drained
    • 1/2 of a 15-oz. can red kidney beans, drained
    • 2/3 cup pizza sauce
    • 1/3 cup chopped fresh cilantro
    • 1 cup shredded Monterey Jack cheese


    Instructions


    1. Place pizza crust on ungreased baking sheet. Heat olive oil in a large nonstick pan. Add onion. Saute for 3 minutes. Add the garlic. Saute for 2 minutes longer. Stir in the beans and pizza sauce.

    2. Cook for 3 minutes, stirring occasionally. Spread the bean mixture evenly over the pizza crust. Sprinkle with cilantro. Top with cheese. Bake at 450 degrees for 10 to 12 minutes or until light brown and bubbly.

      Serves 4

    Tip: Freeze remaining beans in plastic bags or tubs for another pizza.

    Other Topping Ideas: browned ground beef, salsa, chiles, Cheddar, shredded cooked chicken, or Colby-Jack cheese.
