Recipe Introduction
"This is a pizza that hits the flavor trifecta that practically defines American cuisine: salty-sweet-spicy. There are those who decry the combination of ham and pineapple, but I've found they are generally lying to themselves. You can substitute crisped bacon for the ham, or coins of cooked Italian sausage, even a few tablespoons of ground beef. Fresh jalapeños work in place of pickled ones, but I like the pickled acidity as a counterbalance to the richness of the cheese and sweetness of the pineapple."

â—¦ 1 round pizza dough
â—¦ 3 tablespoons pizza sauce
â—¦ 2 ¾ ounces fresh mozzarella
â—¦ ¼ cup pineapple chunks, fresh or canned
â—¦ 2 slices ham, cut into ribbons
â—¦ 10 to 12 sliced pickled jalapeño rounds
â—¦ Extra-virgin olive oil
Recipe
Place a pizza stone or tiles on the middle rack of your oven and turn the heat to its highest setting. Let the oven heat for at least an hour.
Stretch the dough and use a spoon to apply the sauce to its center. Use the back of the spoon to spread it evenly across the surface, stopping about ½ inch from the edges.
Break the cheese into large pieces and place them gently on the sauce. Do the same with the pineapple, ham, and pickled jalapeño. Drizzle a little oil over the top of the pie.
Using a pizza peel, pick up the pie and slide it onto the heated stone in the oven. Bake until the crust is golden brown and the cheese is bubbling, 4 to 8 minutes.
