    .Basics: Traditional Pizza Dough

    • 1 Tbsp active dried yeast
    • 3/4 cup warm water
    • 3 Tbsp olive oil
    • Pinch of sugar
    • 2-1/2 cups unbleached plain flour
    • 1 tsp salt


    Instructions


    1. In a small saucepan, dissolve the yeast in warm water with the sugar and allow to activate for 5 minutes.

    2. Make a well in the flour, pour in the yeast, 1 tablespoon of the oil, and the salt; slowly add the flour from the inside of the well with the fingers, continuing until almost all the flour has been added. Form into a ball and knead for about 10 minutes, adding up to 1/4 cup warm water, if needed.

    3. Form the dough into a ball. Oil a mixing bowl and place the dough inside, turning to coat with the oil. Cover the bowl with a clean dishcloth and leave to rise in a warm place for about 1-1/2 hours.

    4. Preheat oven to 425 degrees (F). Remove the dough and knead for a few minutes. Oil a pizza pan and roll out the dough with a rolling pin to about half its final size. Place the dough in the pan and spread it evenly to the border with your fingers. It should be 1/8- to 1/4-inch thick.

    5. Dress with the desired toppings and bake for 30 minutes until the crust begins to brown.

      Makes enough for one 12- to 14-inch pizza.
