    Asian-Glazed Cornish Hens

    List of Ingredients


    • 1/4 cup soy sauce
    • 1/4 cup teriyaki sauce
    • 3 Tbsp honey
    • 2 Tbsp lemon juice
    • 1 Tbsp grated fresh ginger
    • 1 tsp pepper
    • 3 cloves garlic, minced
    • 2 (1-1/2-pound) Cornish hens
    • Garnishes: Sugar snap peas, lemon slices


    Instructions


    1. Combine first 7 ingredients; stir well. Pour half of marinade into a large, heavy-duty zip-top plastic bag, reserving remaining marinade; add Cornish hens. Seal, and marinate hens in refrigerator 1 hour.

    2. Remove hens from marinade; discard marinade. Tie ends of legs together, if desired, and place hens on a lightly greased rack in a roasting pan.

    3. Bake hens at 400º F for 45 to 50 minutes, or until done, basting occasionally with reserved marinade. Cover hens loosely with aluminum foil to prevent overbrowning, if necessary. Remove hens from oven; let stand 5 minutes. Garnish, if desired.

      Makes 2 servings.
