    • 4 skinless, boneless chicken breast halves
    • ½ cup unseasoned bread crumbs (about)
    • 2 eggs, beaten
    • 2 Tbsp butter
    • 2 Tbsp olive oil
    • 4 tsp finely chopped garlic
    • 4 tsp salt
    • 4 tsp white pepper
    • 8 ounces chicken broth
    • ½ cup white wine
    • 1 cup whipping cream
    • 20 pieces artichoke hearts (about 1 can of quartered artichokes)
    • 16 broccoli flowerets
    • 16 medium mushrooms, sliced
    • 2 tsp freshly chopped parsley
    • Cooked fettuccine (about 1 pound dry noodles)


    Instructions


    1. Lightly coat chicken breasts in bread crumbs, then dip into beaten eggs.

    2. In large skillet, heat butter and oil. Add chicken breasts and cook over medium-high heat until browned, 1½ to 2 minutes per side.

    3. To the pan, add garlic, salt and pepper, broth, wine, cream, artichokes, broccoli, mushrooms and parsley. Cook 7 minutes, or until chicken is cooked through. Serve over fettuccine.

      Makes 4 servings.
