Chicken Breasts Alfredo

- 6 boneless chicken breasts (1-1/2 lbs.)
- 1/2 cup flour
- 3 eggs, beaten
- 3 Tbsp water
- 1/2 cup grated Romano cheese
- 1/4 cup snipped parsley
- 1/2 tsp salt
- 1 cup fine bread crumbs
- 3 Tbsp butter or margarine
- 2 Tbsp vegetable oil
- Cheese sauce (recipe below)
- 6 slices Mozzarella cheese

- 1 cup whipping cream
- 1/4 cup water
- 1/4 cup butter or margarine
- 1/2 cup grated Romano cheese
- 1/4 cup snipped parsley
Instructions
- Coat chicken in flour. Mix eggs, water, Romano cheese, parsley and salt. Dip the chicken into the egg mixture, then into the bread crumbs.
- Heat butter and oil in a large skillet. Cook chicken breasts over medium heat until brown, about 15 minutes. Remove chicken to an 11x17-inch baking dish.
- Meanwhile, heat oven to 425 degrees and make the cheese sauce: Heat the cream, water and butter in a 1-quart saucepan until butter melts. Add cheese; stir over medium heat for 5 minutes. Stir in parsley.
- Pour cheese sauce over chicken in baking dish. Top each piece with a slice of Mozzarella cheese. Bake until cheese melts and chicken is tender, about 8 minutes.
Serve over pasta, if desired.
