    Chicken Breasts Alfredo

    List of Ingredients


    • 6 boneless chicken breasts (1-1/2 lbs.)
    • 1/2 cup flour
    • 3 eggs, beaten
    • 3 Tbsp water
    • 1/2 cup grated Romano cheese
    • 1/4 cup snipped parsley
    • 1/2 tsp salt
    • 1 cup fine bread crumbs
    • 3 Tbsp butter or margarine
    • 2 Tbsp vegetable oil
    • Cheese sauce (recipe below)
    • 6 slices Mozzarella cheese
    • *

    • 1 cup whipping cream
    • 1/4 cup water
    • 1/4 cup butter or margarine
    • 1/2 cup grated Romano cheese
    • 1/4 cup snipped parsley


    Instructions


    1. Coat chicken in flour. Mix eggs, water, Romano cheese, parsley and salt. Dip the chicken into the egg mixture, then into the bread crumbs.

    2. Heat butter and oil in a large skillet. Cook chicken breasts over medium heat until brown, about 15 minutes. Remove chicken to an 11x17-inch baking dish.

    3. Meanwhile, heat oven to 425 degrees and make the cheese sauce: Heat the cream, water and butter in a 1-quart saucepan until butter melts. Add cheese; stir over medium heat for 5 minutes. Stir in parsley.

    4. Pour cheese sauce over chicken in baking dish. Top each piece with a slice of Mozzarella cheese. Bake until cheese melts and chicken is tender, about 8 minutes.

      Serve over pasta, if desired.
