Chicken Breasts with Three Cheeses

List of Ingredients
- 1/4 cup olive oil
- Salt and pepper to taste
- 4 pieces boneless chicken breasts
- 1/2 large onion, chopped
- 2 cloves garlic, chopped
- 2 cups fresh tomato sauce
- 1 Tbsp oregano
- 1/3 cup white wine
- 1 cup grated Parmesan cheese *
- 1/3 cup grated Gruyere cheese *
- 1/3 cup grated Asiago cheese *
Instructions
- Preheat oven to 375 degrees (F). Lightly spray a baking dish with vegetable cooking spray. Heat the oil in a large skillet until hot.
- Season the chicken with salt and pepper. Add the chicken to the skillet and lightly brown on both sides. Place the chicken in the baking dish.
- To the skillet, add the onions and garlic and saute for 2 to 3 minutes. Add the oregano, wine and tomato sauce; simmer for 1 to 2 minutes. Drizzle the sauce on the chicken.
- In a bowl, mix all the cheeses, then top the chicken with the cheese.
- Bake for 20 minutes or until the chicken reaches an internal temperature of 170 degrees (F). Let rest for 5 minutes; serve over sauteed vegetables. Sprinkle with additional cheese.

* The cheeses in this recipe may be substituted with whatever cheese you like or whatever's available; you could use Swiss, Gouda, Havarti, Monterey Jack, etc.
