    Chicken Breasts with Three Cheeses

    List of Ingredients


    • 1/4 cup olive oil
    • Salt and pepper to taste
    • 4 pieces boneless chicken breasts
    • 1/2 large onion, chopped
    • 2 cloves garlic, chopped
    • 2 cups fresh tomato sauce
    • 1 Tbsp oregano
    • 1/3 cup white wine
    • 1 cup grated Parmesan cheese *
    • 1/3 cup grated Gruyere cheese *
    • 1/3 cup grated Asiago cheese *


    Instructions


    1. Preheat oven to 375 degrees (F). Lightly spray a baking dish with vegetable cooking spray. Heat the oil in a large skillet until hot.

    2. Season the chicken with salt and pepper. Add the chicken to the skillet and lightly brown on both sides. Place the chicken in the baking dish.

    3. To the skillet, add the onions and garlic and saute for 2 to 3 minutes. Add the oregano, wine and tomato sauce; simmer for 1 to 2 minutes. Drizzle the sauce on the chicken.

    4. In a bowl, mix all the cheeses, then top the chicken with the cheese.

    5. Bake for 20 minutes or until the chicken reaches an internal temperature of 170 degrees (F). Let rest for 5 minutes; serve over sauteed vegetables. Sprinkle with additional cheese.

      Serves 4



    Final Comments


    * The cheeses in this recipe may be substituted with whatever cheese you like or whatever's available; you could use Swiss, Gouda, Havarti, Monterey Jack, etc.
