Justin's Chicken Scacchi

List of Ingredients
- 1/2 cup chopped onions
- 1/4 cup chopped green bell peppers
- Butter or margarine
- 6 to 8 chicken breasts
- Salt and pepper to taste
- 1 cup white wine
- 1 (8-ounce) can tomato sauce
- 4 Tbsp soy sauce (more or less as desired)
- Hot cooked rice
Instructions
- In a large heavy skillet, saute the onions and bell peppers in a small amount of butter. Place on a warm plate while preparing chicken.
- Remove skin from chicken breasts and season with salt and pepper. In the same skillet, fry the chicken, browning on both sides, using more or less butter as needed.
- Add the wine, tomato sauce, soy sauce, and onions and bell pepper. Simmer for 1 to 1-1/2 hours. Serve over rice.
Makes 6 to 8 servings.
