    Justin's Chicken Scacchi

    List of Ingredients


    • 1/2 cup chopped onions
    • 1/4 cup chopped green bell peppers
    • Butter or margarine
    • 6 to 8 chicken breasts
    • Salt and pepper to taste
    • 1 cup white wine
    • 1 (8-ounce) can tomato sauce
    • 4 Tbsp soy sauce (more or less as desired)
    • Hot cooked rice


    Instructions


    1. In a large heavy skillet, saute the onions and bell peppers in a small amount of butter. Place on a warm plate while preparing chicken.

    2. Remove skin from chicken breasts and season with salt and pepper. In the same skillet, fry the chicken, browning on both sides, using more or less butter as needed.

    3. Add the wine, tomato sauce, soy sauce, and onions and bell pepper. Simmer for 1 to 1-1/2 hours. Serve over rice.

      Makes 6 to 8 servings.
