    Chicken with Pineapple-Kiwi Salsa

    List of Ingredients


    • 1/2 tsp salt
    • 1/8 tsp freshly ground pepper
    • 4 boneless, skinless chicken cutlets
    • 1 Tbsp olive oil
    • .

    • 2 Tbsp chopped red onion
    • 1 Tbsp finely chopped fresh cilantro
    • 3 kiwis, peeled and diced (1-1/4 cups)
    • 1 can (14-ounce) pineapple chunks in juice, diced (reserve juice)
    • 2 Tbsp fresh lime juice
    • 1 tsp chopped jalapeno chile
    • 1/4 tsp salt
    • 1/4 tsp grated fresh ginger


    Instructions


    1. Heat oven to 350 degrees (F). Sprinkle salt and pepper evenly over chicken.

    2. Heat oil in a large nonstick skillet over medium-high heat. Add chicken and cook 3 minutes per side, until browned. Transfer chicken to a jelly-roll pan or cookie sheet.

    3. Bake the chicken 8 to 9 minutes, until cooked through.

    4. Make salsa: Rinse onion under hot running water in fine sieve for 20 seconds; drain. Combine onion and all of the remaining ingredients for salsa in a medium bowl. Serve with chicken.

      Makes 4 servings.
