Chicken in Phyllo

List of Ingredients
- 4 boneless chicken breast halves
- 1/2 cup finely chopped onion
- 8 Tbsp butter, divided
- 1 cup mushrooms, chopped
- 1 clove garlic, finely chopped
- 1-1/2 Tbsp flour
- 1/3 cup white wine
- 2 Tbsp vegetable oil
- 8 sheets phyllo dough
- 1/4 cup butter, melted
- 1/4 cup bread crumbs
Instructions
- Preheat oven to 350 degrees (F). Rinse the chicken and pat dry.
- In a skillet, saute the onions in 3 tablespoons of butter until brown. Remove the onions and add 3 more tablespoons of butter. Saute the mushrooms and the garlic.
- Add the onions back to the pan, add the flour, and mix well. Add the wine and cook until thick. Remove and cool.
- In another skillet, heat the vegetable oil. When hot, add the chicken breasts and remaining 2 tablespoons butter. Saute for 1 minute on each side and remove to a plate.
- Using the 1/4 cup of melted butter, brush one sheet of phyllo dough. Sprinkle with a few bread crumbs and top with another sheet of phyllo. Arrange one of the chicken breasts in the center of the phyllo and spoon 1/4 of the mushroom-onion mixture on top. Roll up the phyllo and fold the ends toward the center.
- When all of the breasts are wrapped, brush each one with the remaining butter, and bake for 30 minutes. Serve at once.
