    Chicken in Phyllo

    List of Ingredients


    • 4 boneless chicken breast halves
    • 1/2 cup finely chopped onion
    • 8 Tbsp butter, divided
    • 1 cup mushrooms, chopped
    • 1 clove garlic, finely chopped
    • 1-1/2 Tbsp flour
    • 1/3 cup white wine
    • 2 Tbsp vegetable oil
    • 8 sheets phyllo dough
    • 1/4 cup butter, melted
    • 1/4 cup bread crumbs


    Instructions


    1. Preheat oven to 350 degrees (F). Rinse the chicken and pat dry.

    2. In a skillet, saute the onions in 3 tablespoons of butter until brown. Remove the onions and add 3 more tablespoons of butter. Saute the mushrooms and the garlic.

    3. Add the onions back to the pan, add the flour, and mix well. Add the wine and cook until thick. Remove and cool.

    4. In another skillet, heat the vegetable oil. When hot, add the chicken breasts and remaining 2 tablespoons butter. Saute for 1 minute on each side and remove to a plate.

    5. Using the 1/4 cup of melted butter, brush one sheet of phyllo dough. Sprinkle with a few bread crumbs and top with another sheet of phyllo. Arrange one of the chicken breasts in the center of the phyllo and spoon 1/4 of the mushroom-onion mixture on top. Roll up the phyllo and fold the ends toward the center.

    6. When all of the breasts are wrapped, brush each one with the remaining butter, and bake for 30 minutes. Serve at once.
