    Chicken with Goat Cheese and Basil

    List of Ingredients


    • 6 boneless chicken breasts, skin on
    • 8 to 10 ounces soft garlic-and-herb goat cheese
    • 6 large fresh basil leaves
    • About 1-1/2 Tbsp good olive oil
    • Kosher salt and freshly ground black pepper


    Instructions


    1. Preheat oven to 375° F.

    2. Place chicken breasts on a sheet pan. Loosen the skin from the meat with your fingers, leaving one side attached. Cut goat cheese into 1/2-inch-thick slices and place one or two slices plus a large basil leaf under the skin of each chicken breast. Pull the skin over as much of the meat as possible so the chicken won't dry out.

    3. With your fingers, rub each piece with olive oil, then sprinkle generously with salt and pepper. Bake 35 to 40 minutes, or until the skin is lightly browned and the chicken is cooked through. Serve hot or at room temperature.

      Serves 4 to 6
