    Cornish Hens with Strawberry Glaze

    List of Ingredients


    • 1/4 cup pureed strawberries
    • 1/2 cup strawberry vinegar
    • Zest of 1 lemon
    • 2 tsp minced shallots
    • Ground pepper to taste
    • 2 Tbsp olive oil
    • 2 Cornish hens, split
    • Fresh strawberries and mint leaves for garnish, if desired


    Instructions


    1. Combine the pureed strawberries, vinegar, lemon zest, shallots, mint, and ground pepper in a small bowl. Whisk in the olive oil until well-blended.

    2. Marinate the Cornish hens in the strawberry mixture for 4 hours in the refrigerator.

    3. Grill the hens, skin-side down, over a hot fire, basting frequently with the marinade. Turn after 10 minutes. Cook for 25 to 30 minutes, or until juices run clear. Garnish, if desired.

      Serves 2
