Cornish Hens with Strawberry Glaze

List of Ingredients
- 1/4 cup pureed strawberries
- 1/2 cup strawberry vinegar
- Zest of 1 lemon
- 2 tsp minced shallots
- Ground pepper to taste
- 2 Tbsp olive oil
- 2 Cornish hens, split
- Fresh strawberries and mint leaves for garnish, if desired
Instructions
- Combine the pureed strawberries, vinegar, lemon zest, shallots, mint, and ground pepper in a small bowl. Whisk in the olive oil until well-blended.
- Marinate the Cornish hens in the strawberry mixture for 4 hours in the refrigerator.
- Grill the hens, skin-side down, over a hot fire, basting frequently with the marinade. Turn after 10 minutes. Cook for 25 to 30 minutes, or until juices run clear. Garnish, if desired.
