Daniel's Chicken a la King

- 1/4 cup oil
- 2 potatoes, peeled and diced
- 1 lb. skinless, boneless chicken breasts (diced)
- 1/2 Tbsp each: salt, cayenne, black pepper, and garlic powder (or to taste)
- 1 medium onion, chopped (about 1 cup)
- 1/4 lb. mushrooms, sliced
- 1 cup sliced celery
- 1/2 cup fresh green beans
- 1 cup baby carrots
- 1/2 cup chopped green bell pepper
- 4 chicken bouillon cubes, dissolved in 1 cup cold water and mixed with 1 tsp cornstarch
- 1 (26-oz.) can cream of mushroom soup, along with 1 cup water
- 1/4 cup fresh green peas
Instructions
- Heat the oil in a 4-quart stockpot over medium heat. Add the diced potatoes.
- Meanwhile, season the chicken pieces with each of the spices. Add seasoned chicken to potatoes in pot and brown over moderate heat, stirring occasionally to prevent sticking.
- Add the onions and stir to combine. Add baby carrots. Season mixture with additional black pepper to taste, and continue cooking, stirring occasionally.
- Add mushrooms. If necessary, add a little water during cooking to prevent sticking. Add bell pepper and stir to combine.
- Add bouillon-cornstarch mixture and combine thoroughly. Next, add the cream of mushroom soup plus 1 cup water; combine well. Cover and cook over low heat for 10 to 15 minutes until heated through, or simmer until serving time (no longer than 30 minutes).
Serve with French bread.
