Golden Onions and Chicken

- 1 cut-up fryer, skinned
- 3 Tbsp vegetable oil
- 4 cups sliced onions
- 1/4 cup white wine or chicken broth
- 1/4 cup lemon juice
- 1 Tbsp paprika
- 3/4 tsp salt
Instructions
- In large skillet over medium-high heat, heat oil; add chicken and brown on all sides, about 10 minutes. Remove browned chicken pieces to a plate.
- Add onions to same skillet and cook over medium-high heat, stirring frequently, until browned and caramelized, about 15 minutes.
- Stir in wine, lemon juice, paprika and salt. Return chicken to skillet; cover and reduce heat to low. Simmer until chicken is fork-tender, about 30 to 35 minutes.
Makes 4 servings.
