    Heavenly Roast Chicken

    Adapted from a recipe by the Seattle Post-Intelligencer


    List of Ingredients


    • 1 roasting chicken (at least 4 lbs.)
    • 4 cloves garlic, chopped
    • 1 lemon, seeded and chopped
    • 1 small white or yellow onion, chopped
    • 1 tsp rosemary, stemmed
    • 1 tsp thyme, stemmed
    • 1/2 tsp kosher salt
    • 1 tsp green peppercorns


    Instructions


    1. Preheat oven to 450 degrees (F). Rinse chicken and pat dry. In a food processor, combine garlic, lemon, onion, rosemary, thyme, salt and pepper.

    2. Pat the grated slurry over the chicken breast, using any extra to loosely stuff the bird. Bake at 350 degrees (F) until juices run clear (about 20 minutes per pound). If desired, baste with pan juices 2 or 3 times.

    3. When done, cover bird with aluminum foil and let sit for 10 minutes before carving. Remove pan juices with a turkey baster for gravy.

      Serves 4 to 6
