"When Billie Cline Hill was a small child in the 1930s, her parents, Kate Belk and John Douglas Cline, opened a grocery store on Cedar Avenue in South Pittsburg, Tennessee. Mrs. Cline would cook the family meals in the rear of the store. Workmen at the Sequachee Valley Electric Cooperative building next door had a break at 9 a.m., and Billie's mother always put out a plate of leftovers from the previous night's dinner for the men to enjoy. Her fried chicken was such a favorite that she always cooked extra just for them."

◦  1 cup all-purpose flour
◦  1 tablespoon salt
◦  1 teaspoon freshly ground black pepper
◦  2 cups vegetable shortening
◦  2 large eggs
◦  ¼ cup milk
◦  1 whole chicken, cut into 8 pieces
Recipe
Combine the flour, salt, and pepper in a bowl large enough to hold the largest piece of chicken. Heat the shortening in a large cast iron Dutch oven over medium heat to 325° F.
While the shortening heats, beat the eggs and milk in a bowl large enough to hold the largest piece of chicken. Dip the chicken pieces, one at a time, into the egg mixture, dredge them in the flour mixture, and then back into the egg mixture and the flour mixture.
Slowly fry the chicken until it is golden brown on all sides and cooked through. You may need to turn the heat down to prevent the chicken from getting too brown before it's done.
