    New Chicken Cordon Bleu

    Source of Recipe

From "Good Housekeeping Best Recipes 1999"

    List of Ingredients

    • 1 Tbsp butter or margarine
    • 4 small skinless, boneless chicken breast halves (about 1 lb.)
    • 1/2 cup chicken broth
    • 2 Tbsp balsamic vinegar
    • 1/8 tsp coarsely ground black pepper
    • 4 thin slices cooked ham (about 2 ounces)
    • 4 thin slices part-skim mozzarella cheese (about 2 ounces)
    • 1 bag (5 to 6 ounces) prewashed baby spinach

    Instructions

    1. In nonstick 12-inch skillet, melt butter over medium-high heat. Add chicken breasts and cook until golden brown, about 6 minutes. Turn breasts over; cover and reduce heat to medium. Cook chicken breasts about 6 minutes longer or until juices run clear when thickest part is pierced with tip of knife.

    2. Increase heat to medium-high. Stir in chicken broth, vinegar and pepper; cook, uncovered, 1 minute. Remove skillet from heat; top each chicken breast with a slice of ham, then a slice of cheese. Cover skillet until cheese melts, about 3 minutes.

    3. Arrange spinach on large platter; top with chicken breasts, and drizzle with balsamic mixture.

      Makes 4 main-dish servings.
