    Rustic Oven-Grilled Chicken

    List of Ingredients


    • 1 broiler-fryer chicken, cut into 4 to 5 pieces
    • 2 Tbsp Cajun or Creole seasoning
    • 1 Tbsp rosemary
    • 1 Tbsp freshly ground black pepper
    • 1 Tbsp salt
    • 1 Tbsp cayenne pepper (or more, to taste)
    • 1 Tbsp liquid smoke
    • 3 Tbsp Worcestershire sauce
    • Olive oil, for drizzling


    Instructions


    1. Preheat broiler. Place chicken pieces into a large baking dish and season them evenly with the dry seasonings. Sprinkle the liquid smoke and Worcestershire sauce evenly over chicken pieces. Rub seasonings into the chicken with your fingers. Sprinkle with olive oil.

    2. Broil for about 10 minutes, then turn the chicken pieces over. Cook for 50 to 55 minutes, turning every so often -- about every 8 to 10 minutes, until done.

      Serve with hot, cooked rice, black-eyed peas and a green vegetable of your choice.
