    Southwestern Spice Rubbed Chicken

    List of Ingredients


    • 1 tsp cumin seeds
    • 1 tsp coriander seeds
    • 1/2 cup brown sugar
    • 1 tsp kosher salt
    • 1 tsp mild chili powder
    • 1/2 tsp ground black pepper
    • 1 tsp paprika
    • 1 tsp red chili flakes
    • Chicken pieces


    Instructions


    1. Lightly toast cumin and coriander seeds over medium heat. Let seeds cool, then grind in a spice grinder or with a mortar and pestle.

    2. Mix brown sugar, salt, chili powder, black pepper, paprika, chili flakes and coarse-ground seeds. Mix well with your fingers. Sprinkle over chicken and set in a refrigerator for 10 minutes.

    3. Bake chicken at 350 degrees (F) for 45 minutes. Serve as is, or remove meat from bone and chop for enchiladas or tacos.

      (Extra rub stays fresh in a sealed plastic bag and can be used on other meats.)
