Southwestern Spice Rubbed Chicken

- 1 tsp cumin seeds
- 1 tsp coriander seeds
- 1/2 cup brown sugar
- 1 tsp kosher salt
- 1 tsp mild chili powder
- 1/2 tsp ground black pepper
- 1 tsp paprika
- 1 tsp red chili flakes
- Chicken pieces
Instructions
- Lightly toast cumin and coriander seeds over medium heat. Let seeds cool, then grind in a spice grinder or with a mortar and pestle.
- Mix brown sugar, salt, chili powder, black pepper, paprika, chili flakes and coarse-ground seeds. Mix well with your fingers. Sprinkle over chicken and set in a refrigerator for 10 minutes.
- Bake chicken at 350 degrees (F) for 45 minutes. Serve as is, or remove meat from bone and chop for enchiladas or tacos.
(Extra rub stays fresh in a sealed plastic bag and can be used on other meats.)
