Stephen Lake Lodge Crispy Parmesan Chicken

List of Ingredients
- 6 Tbsp evaporated milk
- 6 Tbsp oil
- 16 chicken pieces
- 1-1/2 cups crushed Saltine crackers
- 2/3 cup grated Parmesan cheese
- 1-1/2 tsp salt
- 1 tsp celery salt
- 1 tsp garlic powder
- 1 tsp paprika
- 1/2 tsp onion powder
- 1/2 tsp pepper
Instructions
- Preheat oven to 375° F.
- In a bowl, mix together the evaporated milk and oil; set aside. In a pie plate, thoroughly combine the crushed crackers, cheese, salt, celery salt, garlic powder, paprika, onion powder and pepper. Dip chicken pieces in milk mixture, then roll in cracker mixture to coat well.
- Arrange pieces, not touching, on rimmed cookie sheets or in shallow pans, and bake for 1 hour or until the chicken is tender and cooked through.
Makes 6 to 8 servings.
