    Thai Basil Chicken

    List of Ingredients


    • 2 Tbsp minced garlic
    • 1 Tbsp salad oil
    • 4 boned and skinned chicken breast halves (about 1-1/4 lb. total)
    • 1 cup lightly packed fresh basil leaves
    • 3 Tbsp each lemon juice and water
    • 1 Tbsp soy sauce
    • 1 Tbsp sugar
    • 1/2 tsp pepper


    Instructions


    1. Combine garlic and oil in a 10- to 12-inch frying pan. Stir often over medium-high heat until garlic is golden -- 3 to 4 minutes. With a slotted spoon, transfer garlic to a small bowl.

    2. Add the chicken to the pan. Cook, turning to lightly brown, about 5 minutes. Thinly slice basil. Add 1/2 cup of the basil to the pan with the garlic, lemon juice, water, soy, sugar, and pepper. Cover and simmer until chicken is white in thickest part (cut to test), 6 to 7 minutes; spoon juices over chicken often.

    3. Put chicken on a platter; keep warm. Boil pan juices, uncovered, over high heat until reduced to 1/4 cup. Stir in remaining sliced basil; pour over chicken.

      Serves 4
