Thai Basil Chicken

List of Ingredients
- 2 Tbsp minced garlic
- 1 Tbsp salad oil
- 4 boned and skinned chicken breast halves (about 1-1/4 lb. total)
- 1 cup lightly packed fresh basil leaves
- 3 Tbsp each lemon juice and water
- 1 Tbsp soy sauce
- 1 Tbsp sugar
- 1/2 tsp pepper
Instructions
- Combine garlic and oil in a 10- to 12-inch frying pan. Stir often over medium-high heat until garlic is golden -- 3 to 4 minutes. With a slotted spoon, transfer garlic to a small bowl.
- Add the chicken to the pan. Cook, turning to lightly brown, about 5 minutes. Thinly slice basil. Add 1/2 cup of the basil to the pan with the garlic, lemon juice, water, soy, sugar, and pepper. Cover and simmer until chicken is white in thickest part (cut to test), 6 to 7 minutes; spoon juices over chicken often.
- Put chicken on a platter; keep warm. Boil pan juices, uncovered, over high heat until reduced to 1/4 cup. Stir in remaining sliced basil; pour over chicken.
