Three-Alarm Firecracker Chicken

List of Ingredients
- 1 Tbsp soy sauce
- 1 tsp cornstarch
- 1 lb. boneless, skinless chicken breasts, cut crosswise into 1/2-inch strips
- 1/3 cup catsup
- 1/4 cup chicken broth
- 1 Tbsp chili garlic sauce
- 1 tsp granulated sugar
- 1 Tbsp vegetable oil
- 1 jalapeño chile, cut into thin strips
- 8 small dried red chiles
- 1 red bell pepper, seeded and julienned
- 1/2 yellow onion, thinly sliced
Instructions
- Combine soy sauce and cornstarch in a bowl; add chicken and stir to coat evenly. Let stand 10 minutes.
- Combine catsup, chicken broth, chili garlic sauce and sugar in a small bowl; mix sauce well and set aside.
- Place a stir-fry pan over high heat until hot. Add oil, swirling to coat sides. Add fresh and dried chiles; cook, stirring, until dried chiles begin to brown, about 15 seconds. Add chicken, bell pepper and onion; stir-fry until chicken is no longer pink in the center, 2 to 3 minutes. Add sauce and bring to a boil. Stir evenly to coat chicken, and serve.
Makes 4 servings.
